Instructions
- 1
If using wooden skewers, soak them in water for 10 minutes. Preheat the Air Fryer to 375°F (190°C).
- 2
In a large bowl, toss the Brussels sprouts with the olive oil, salt, and black pepper until evenly coated.
- 3
Thread the Brussels sprouts halves and halloumi cubes onto the skewers, alternating them to make 8 skewers.
- 4
In a small bowl, stir together the apricot jam, Dijon mustard, lemon juice, and garlic until smooth.
- 5
Place the skewers in the Air Fryer basket in a single layer. Cook at 375°F (190°C) for 6 minutes.
- 6
Open the Air Fryer and brush the skewers with half of the apricot mustard glaze. Continue cooking at 375°F (190°C) for 4 more minutes.
- 7
Brush again with the remaining glaze, sprinkle the sesame seeds over the skewers, and cook for 2 additional minutes at 375°F (190°C), until the halloumi is golden and the Brussels sprouts are tender with crisp edges.
- 8
Transfer the skewers to a serving platter, top with the chopped fresh chives, and serve hot.
Chef tips
Do not overcrowd the basket so the halloumi can brown properly. If your Brussels sprouts are large, quarter them so they cook at the same rate as the cheese. Serve with a few extra drops of lemon for more contrast.
Substitutions
You can use firm queso panela or grilling cheese instead of halloumi, though the result will be slightly less salty. Peach jam works well in place of apricot. Chives can be replaced with fresh parsley.
