Instructions
- 1
Preheat the air fryer to 380°F / 193°C for 3 minutes.
- 2
In a large bowl, toss the delicata squash with the olive oil, 1/2 teaspoon of the salt, black pepper, garlic powder, and smoked paprika until evenly coated.
- 3
Arrange the squash in the air fryer basket in a single layer. Cook at 380°F / 193°C for 8 minutes.
- 4
Open the basket, flip the pieces, and cook for 6 to 8 minutes more at 380°F / 193°C, until the squash is tender and browned on the edges.
- 5
Meanwhile, make the sauce by whisking together the tahini, maple syrup, lemon juice, water, and the remaining 1/4 teaspoon salt in a small bowl until smooth and lightly pourable.
- 6
Transfer the cooked squash to a serving platter. Drizzle the maple tahini sauce over the top.
- 7
Finish with the za’atar, pomegranate seeds, and fresh parsley. Serve immediately.
- 8
If you want to reheat it, return the squash alone to the air fryer at 350°F / 177°C for 2 to 3 minutes and add the sauce and toppings afterward.
Chef tips
Do not overcrowd the basket; cook in batches if needed for better browning. Delicata squash has edible skin, so there is no need to peel it.
Substitutions
You can swap delicata squash for acorn squash cut into thin half-moons. Maple syrup can be replaced with honey if you do not need a vegan version. If you do not have za’atar, use a mix of dried oregano, thyme, and an extra pinch of sesame seeds.
