Instructions
- 1
1. In a large bowl, combine the bread flour, granulated sugar, fine salt, and instant dry yeast.
- 2
2. Add the warm whole milk, 1 large egg, and 1 teaspoon vanilla extract. Mix until a shaggy dough forms.
- 3
3. Gradually incorporate the 60 g softened unsalted butter and knead for 10 to 12 minutes, until the dough is smooth, elastic, and slightly glossy.
- 4
4. Place the dough in a greased bowl, cover, and let it rise for 75 to 90 minutes, or until nearly doubled in size, in a warm spot.
- 5
5. While the dough rises, make the filling: in a medium saucepan cook the golden plums, brown sugar, 20 g unsalted butter, ground cinnamon, ground ginger, and lemon juice over medium heat for 6 to 8 minutes, stirring occasionally.
- 6
6. Add the cornstarch to the plum mixture and cook 1 to 2 minutes more, until thickened. Transfer the filling to a plate and let it cool completely.
- 7
7. Stir the mascarpone cheese until creamy and keep it chilled until ready to use.
- 8
8. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 14 x 11 inches.
- 9
9. Spread the mascarpone over the dough, leaving a 1 cm border. Spoon the cooled plum compote over it and sprinkle with 8 g poppy seeds.
- 10
10. Roll up the dough from the long side into a firm log. Cut into 10 equal pieces and place them in a greased baking dish or tray, leaving space between them.
- 11
11. Cover the swirls and proof for 30 to 40 minutes, until puffy. Meanwhile, preheat the oven to 350°F / 175°C.
- 12
12. Brush the swirls with the beaten egg and sprinkle the remaining poppy seeds on top.
- 13
13. Bake for 24 to 30 minutes at 350°F / 175°C, until golden and baked through in the center.
- 14
14. Let cool in the pan for 15 minutes. Mix the powdered sugar with 1 tablespoon whole milk and 1/2 teaspoon vanilla extract until smooth.
- 15
15. Drizzle the glaze over the warm swirls and serve.
Chef tips
If the plums are very juicy, cook the compote an extra minute to prevent the filling from leaking out. Cool the filling completely before spreading it over the dough to keep the layers defined.
Substitutions
You can replace the mascarpone with full-fat cream cheese and the golden plums with firm red plums. The cinnamon and ginger can be swapped for a pinch of nutmeg and extra vanilla.
