Instructions
- 1
1. In a large bowl, combine the bread flour, sugar, salt, and instant dry yeast.
- 2
2. Add the warm milk, 1 egg, and 70 g softened unsalted butter. Knead for 8 to 10 minutes until the dough is smooth and elastic.
- 3
3. Shape into a ball, place in a lightly greased bowl, cover, and let rest for 20 minutes in a warm spot until relaxed and slightly puffed.
- 4
4. While the dough rests, toast the shredded coconut in a skillet over medium-low heat for 2 to 3 minutes, stirring constantly, until golden and fragrant. Set aside.
- 5
5. In the same skillet, melt 90 g unsalted butter over medium-low heat until lightly golden and nutty-smelling, 3 to 4 minutes. Remove from the heat and stir in the brown sugar, ground cinnamon, ground ginger, and toasted coconut to make a spreadable paste.
- 6
6. Place the diced mango in the still-warm skillet, add 15 ml lime juice, and cook for 2 to 3 minutes over medium heat until slightly softened but still holding its shape. Let cool, then mix with the chopped cashews.
- 7
7. Roll the dough out on a lightly floured surface into a rectangle about 14 x 18 inches.
- 8
8. Spread the toasted coconut butter mixture evenly over the dough, leaving a 1 cm / 1/2 inch border. Scatter the spiced mango and cashew mixture evenly on top.
- 9
9. Roll the dough up tightly from the long side to form a log. Cut into 10 equal pieces.
- 10
10. Arrange the swirls in a greased baking pan or tray, leaving some space between them. Cover and let rest for 10 minutes.
- 11
11. Preheat the oven to 350°F and 175°C.
- 12
12. Brush the swirls with the beaten egg and bake for 24 to 27 minutes at 350°F and 175°C, until well risen and golden.
- 13
13. While they bake, whisk together the powdered sugar, 20 ml lime juice, and 15 ml milk until you have a smooth, pourable glaze.
- 14
14. Let the swirls cool for 10 minutes. Drizzle the lime glaze over the top and serve warm or at room temperature.
Chef tips
If the mango is very juicy, drain it briefly after sautéing so the filling does not overly moisten the dough. For cleaner cuts, use a serrated knife or unflavored kitchen thread.
Substitutions
You can swap the cashews for pecans if you want a toastier flavor profile. The lime juice can be replaced with lemon juice for a brighter, sharper finish.
