Instructions

  1. 1

Preheat the oven to 400°F / 200°C to roast the grapes. Place the black grapes on a small tray, sprinkle with 1 tablespoon of the brown sugar and half of the lemon thyme. Roast for 15 minutes at 400°F / 200°C until softened and slightly concentrated. Let cool and drain excess juice if needed.

  2. 2

While the grapes roast, make the dough. In a large bowl, combine the bread flour, sugar, salt, and instant dry yeast.

  3. 3

Add the warm milk, 1 egg, and the 60 g softened butter. Knead for 8 to 10 minutes until the dough is smooth and elastic. Cover and let rise for 60 minutes in a warm spot, until nearly doubled in size.

  4. 4

For the filling, melt the 70 g butter in a small saucepan over medium heat until lightly nutty and golden. Add the honey and cook for 30 to 60 seconds more, stirring, until it smells toasted. Remove from the heat and let cool slightly.

  5. 5

Mix the toasted honey butter with the remaining brown sugar, lemon zest, cinnamon, and all-purpose flour until it forms a spreadable paste.

  6. 6

Deflate the dough and roll it out on a lightly floured surface into a rectangle about 12 x 16 inches / 30 x 40 cm. Spread the toasted honey butter mixture all over the surface.

  7. 7

Scatter the cooled roasted grapes over the dough and sprinkle with the remaining lemon thyme. Roll up from the long side into a firm log.

  8. 8

Cut the log into 8 equal pieces and place them in a greased or lined baking pan, leaving some space between each piece. Cover and rest for 20 minutes.

  9. 9

Preheat the oven to 350°F / 175°C. Brush the swirls with the beaten egg and bake for 18 to 20 minutes at 350°F / 175°C, until well puffed and golden.

  10. 10

While they bake, whisk the powdered sugar with the lemon juice and milk until smooth.

  11. 11

Let the swirls cool for 10 minutes, then finish with the lemon glaze over the top. Serve warm or at room temperature.

Chef tips

If the grapes release a lot of juice, drain them well before using so the filling does not make the dough too wet. You can also chill the log for 10 minutes before slicing for cleaner swirls.

Substitutions

You can use regular fresh thyme if lemon thyme is unavailable. Black grapes can be replaced with seedless red grapes, though the flavor will be slightly less intense. Whole milk may be swapped for reduced-fat milk, with a slightly less rich crumb.
