Instructions
- 1
Preheat the air fryer to 360 °F / 180 °C for 3 minutes.
- 2
Remove the stems from the mushrooms and clean the caps with a paper towel. Finely chop the stems to use in the filling.
- 3
In a bowl, toss the mushroom caps with 1 teaspoon olive oil, a pinch of salt, and a little black pepper. Set aside.
- 4
Heat a small skillet over medium heat and add 2 teaspoons olive oil. Sauté the shallot, garlic, and chopped mushroom stems for 3 to 4 minutes, until softened.
- 5
Add the chopped spinach to the skillet and cook for 1 to 2 minutes, just until wilted. Remove from the heat and let cool slightly for 2 minutes.
- 6
In a medium bowl, combine the spinach mixture, goat cheese, chopped walnuts, half of the breadcrumbs, lemon zest, lemon juice, parsley, the remaining salt, and black pepper. Mix well until evenly combined.
- 7
Fill each mushroom with the mixture, pressing lightly so it stays in place. Sprinkle the remaining breadcrumbs over the top.
- 8
Arrange the stuffed mushrooms in the air fryer basket in a single layer. Cook at 360 °F / 180 °C for 10 to 12 minutes, until the filling is golden and the mushrooms are tender.
- 9
Let rest for 2 minutes before serving so the filling can set. Serve hot or warm.
Chef tips
If your mushrooms are very large, add 2 to 3 more minutes of cooking time. For a more golden finish, lightly mist the tops with a few extra drops of oil before cooking.
Substitutions
You can substitute the shallot with finely chopped white onion. Walnuts can be replaced with almonds if you prefer a different tree nut. Goat cheese can be swapped for cream cheese for a milder flavor.
