Instructions
- 1
1. Preheat the oven to 220 °C / 425 °F. Lightly grease a baking tray or baking dish with 1 tablespoon of olive oil.
- 2
2. Place the red snapper fillets in a bowl and season them with the lime juice, half of the dried oregano, 3 grated garlic cloves, 1 teaspoon of salt, and 1/4 teaspoon of black pepper. Let rest for 10 minutes while you prepare the remaining components.
- 3
3. Place the taro in a pot with enough water to cover and a pinch of salt. Cook over medium-high heat for 20 to 25 minutes, until very tender when pierced.
- 4
4. While the taro cooks, mix the cassava flatbread crumbs with 2 tablespoons of olive oil, the remaining dried oregano, and a pinch of black pepper, rubbing with your fingers until sandy and lightly moistened.
- 5
5. Arrange the red snapper fillets on the prepared tray. Press the cassava mixture onto the top of each fillet to create an even crust.
- 6
6. Bake for 12 to 15 minutes at 220 °C / 425 °F, or until the fish is cooked through and the cassava crust is golden and crisp.
- 7
7. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the red onion, sweet peppers, and 1 chopped garlic clove. Cook for 3 to 4 minutes until softened but still slightly textured.
- 8
8. Add the white vinegar, 1/2 teaspoon salt, the remaining black pepper, and 2 tablespoons of chopped cilantro. Cook 1 minute more to create a warm, fragrant mojo. Remove from the heat.
- 9
9. Drain the cooked taro and transfer it to a bowl. Mash it rustic-style with the butter, the remaining tablespoon of olive oil, and 2 more tablespoons of chopped cilantro. If needed, add a little of the reserved water gradually until you get a soft mash with some texture. Adjust salt to taste.
- 10
10. Serve a bed of rustic taro mash on each plate, top with a cassava-crusted red snapper fillet, and finish with the warm sweet pepper and red onion mojo spooned over or alongside.
Chef tips
For a crispier crust, pat the fillets very dry before adding the cassava topping. The mojo should stay juicy rather than dry to contrast with the fish texture.
Substitutions
You can substitute the red snapper with grouper or thick tilapia fillets. If taro is unavailable, use malanga. For a dairy-free version, replace the butter with more olive oil.
