Instructions

  1. 1

    1. In a bowl, season the chicken with 1 teaspoon of the salt, the black pepper, 1 teaspoon of the dried oregano, half of the minced garlic, and the sour orange juice. Mix well and let rest in the refrigerator for 15 minutes.

  2. 2

    2. Meanwhile, place the grated taro in a clean towel and squeeze lightly to remove excess moisture. Mix it with 1/2 teaspoon of salt, 1 teaspoon of the remaining garlic, and half of the chopped cilantro.

  3. 3

    3. Heat a large skillet over medium-high heat and add 2 tablespoons of the vegetable oil. Once hot, brown the chicken in batches for 3 to 4 minutes per side until nicely colored. Remove and set aside; the chicken will finish cooking later.

  4. 4

    4. In the same skillet, reduce to medium heat, add the remaining 1 tablespoon vegetable oil, and sauté the red onion and sweet peppers for 4 minutes, stirring often. Add the rest of the garlic and cook 30 seconds more.

  5. 5

    5. Add the tomato paste and cook for 1 minute to deepen the flavor. Pour in the passion fruit pulp, water, the remaining 1 teaspoon dried oregano, and the rest of the salt. Stir well to form an even sauce.

  6. 6

    6. Return the chicken and its juices to the skillet. Cover partially and cook over medium-low heat for 12 to 15 minutes, until the chicken is tender and reaches a safe internal temperature of 165°F / 74°C.

  7. 7

    7. While the sauce reduces, heat another large skillet over medium heat and melt the butter, adding any small amount of oil left clinging to the bowl or skillet if applicable; otherwise use only the measured butter. Spread the taro mixture into an even layer and cook for 5 to 6 minutes per side, pressing with a spatula, until golden and crisp. If you prefer to finish it in the oven, transfer it to a preheated oven at 400°F / 200°C for 8 minutes after browning the first side.

  8. 8

    8. Adjust the chicken sauce with the lime juice and taste for salt. Add the remaining cilantro and turn off the heat.

  9. 9

    9. Serve a base of crispy golden taro hash and spoon the chicken on top with plenty of passion fruit sauce, red onion, and sweet peppers.

Chef tips

For better browning, avoid moving the chicken too early. Passion fruit should taste balanced between tart and sweet; if it is very tart, let the sauce reduce for 2 to 3 extra minutes.

Substitutions

If you do not have sour orange juice, use 2 tablespoons orange juice plus 2 tablespoons lime juice. Taro can be replaced with malanga or a mix of taro and potato, though the flavor will change. Butter can be replaced with more vegetable oil for a dairy-free version.
