Instructions
- 1
1. Preheat the oven to 220 °C / 425 °F. Lightly grease a baking sheet or baking dish with 1 tablespoon of olive oil.
- 2
2. Place the green bananas in a pot with enough water to cover and add the vinegar and 1/2 teaspoon salt. Boil over medium-high heat for 18 to 20 minutes, until tender but still firm. Drain, let rest for 5 minutes, and cut into thick slices.
- 3
3. While the bananas cook, make the mojo by mixing the sour orange juice, lime juice, half of the garlic, 2 tablespoons olive oil, oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Set aside.
- 4
4. In another bowl, combine the crushed casabe with the melted butter, 1 tablespoon olive oil, the remaining garlic, parsley, half of the cilantro, 1/4 teaspoon salt, and the remaining black pepper until you have moist crumbs.
- 5
5. Pat the red snapper fillets dry with paper towels. Season them with 1/2 teaspoon salt and brush both sides with 2 tablespoons of the mojo. Place them on the prepared tray and press the casabe mixture onto the top of each fillet.
- 6
6. Bake the fish for 12 to 15 minutes at 220 °C / 425 °F, or until it flakes easily with a fork and the crust is golden.
- 7
7. While the fish bakes, heat 1 tablespoon olive oil in a skillet over medium heat. Add the red onion and sweet pepper. Cook for 2 to 3 minutes until just softened. Add the cooked banana slices and toss gently for 1 minute more.
- 8
8. Remove the skillet from the heat and add the avocado, the remaining cilantro, 2 to 3 tablespoons of the reserved mojo, and a pinch of salt. Toss gently to form a warm salad without mashing the avocado.
- 9
9. Serve a bed of warm green banana salad on each plate. Top with a casabe-crusted red snapper fillet and finish with the remaining mojo over the top or on the side.
- 10
10. Serve immediately to keep the crust crisp and preserve the contrast between the hot fish and the warm fresh salad.
Chef tips
Crush the casabe by hand or in a processor without turning it into fine powder; a medium crumb gives the best crust. If your snapper fillets are thin, start checking at 10 minutes to avoid overcooking.
Substitutions
You can substitute the red snapper with grouper, mahi-mahi, or firm tilapia. If sour orange is unavailable, use 3 tablespoons orange juice plus 3 tablespoons lime juice. For a dairy-free version, replace the butter with 2 additional tablespoons of olive oil.
