Instructions

1. Toast the walnuts in a small skillet over medium heat for 2 to 3 minutes, stirring often, until fragrant. If you prefer using an oven or air fryer, toast them at 180 °C / 350 °F for 3 to 4 minutes. Remove and let cool.
- 2
2. In a small bowl, mix the gorgonzola with the Greek yogurt, black pepper, and a pinch of salt until smooth and lightly whipped.
- 3
3. In another small bowl, combine the honey with the fresh thyme leaves and set aside.
- 4
4. Slice the pears lengthwise into thick slices so each piece works like a small spoon or base. Immediately drizzle with the lemon juice to prevent browning.
- 5
5. Spoon a small teaspoon of the gorgonzola cream onto each pear slice.
- 6
6. Finish with the toasted walnuts on top and a light drizzle of thyme honey over each bite.
- 7
7. Serve right away to keep the pear crisp and preserve the contrast between the cream, honey, and walnuts.
Chef tips
For a neater presentation, pipe the cream with a pastry bag or a small plastic bag with the tip snipped off. If the pear slices are too rounded, trim a very thin base so they sit flat on the platter.
Substitutions
You can swap the gorgonzola for mild blue cheese or creamy goat cheese for a different flavor. Walnuts can be replaced with pecans or almonds if preferred.
