2. In a bowl or blender cup, blend the cooked white beans with the Greek yogurt, 2 teaspoons (10 ml) of the olive oil, the lemon juice, salt, black pepper, and sweet paprika until smooth and thick.
- 3
3. Dice the orange into small cubes, finely chop the green olives, roughly chop the smoked almonds, and finely slice the fresh chives.
- 4
4. Fill each endive leaf with a spoonful of the white bean cream.
- 5
5. Top with the orange, green olives, smoked almonds, and fresh chives.
- 6
6. Finish with the remaining olive oil drizzled on top and an extra pinch of sweet paprika. Serve immediately, well chilled. No cooking is required; if any ingredient is warmed, keep cook time at 0 minutes and no temperature in °F or °C applies.
Chef tips
For a smoother texture, mash the beans with a fork first and then blend. Dry the endive leaves very well so the filling stays in place and does not slide off.
Substitutions
You can replace the Greek yogurt with unsweetened plant-based yogurt for a dairy-free version. Smoked almonds can be swapped for toasted sunflower seeds if you need to avoid tree nuts, and green olives can be replaced with black olives for a milder flavor.
