Instructions
- 1
1. Preheat the oven to 400°F / 200°C. Toss the red grapes with the brown sugar and lemon juice, place them on a small baking tray, and roast for 15 minutes at 400°F / 200°C until juicy and slightly concentrated. Let them cool completely.
- 2
2. In a large bowl, combine the bread flour, sugar, salt, and instant dry yeast. Add the warm whole milk, 1 egg, and the vanilla extract. Mix until a dough forms.
- 3
3. Gradually incorporate the 60 g softened unsalted butter and knead for 10 to 12 minutes, until the dough is smooth, elastic, and only slightly tacky.
- 4
4. Transfer the dough to a lightly greased bowl, cover, and let it rise for 60 to 75 minutes in a warm place, until nearly doubled in size.
- 5
5. While the dough rises, make the filling by mixing the 70 g unsalted butter, malt extract, and ground cinnamon into a spreadable paste. In another bowl, combine the sliced almonds with 12 g sugar and the melted butter to make the crunchy topping.
- 6
6. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 14 x 10 inches / 35 x 25 cm. Spread the malt butter evenly over the entire surface.
- 7
7. Scatter the cooled roasted red grapes over the malt butter, leaving a 3/4-inch / 2 cm border. Roll the dough tightly from the long side into a log.
- 8
8. Slice the log lengthwise in half to expose the layers and gently twist the two strips together with the cut sides facing up. Coil the twist into a compact spiral ring and place it on a parchment-lined baking tray.
- 9
9. Cover the shaped pastry and let it proof for 30 minutes. Meanwhile, preheat the oven to 350°F / 175°C.
- 10
10. Brush the spiral with the beaten egg and sprinkle the almond, sugar, and melted butter mixture over the top.
- 11
11. Bake for 28 to 30 minutes at 350°F / 175°C, until deeply golden and cooked through in the center. If it browns too quickly, loosely tent with foil during the final minutes.
- 12
12. As soon as it comes out of the oven, brush the surface with honey for shine. Let it cool for at least 20 minutes before serving.
- 13
13. Serve the spiral warm or at room temperature, making sure each portion includes layers of dough, roasted grapes, and crunchy almond topping.
Chef tips
Roasting the grapes first keeps them from releasing too much moisture into the dough. If your kitchen is cool, let the dough rise inside a turned-off oven with a cup of hot water placed beside it.
Substitutions
You can replace the sliced almonds with chopped pecans for a different flavor profile. Malt extract can be replaced with mild molasses, though the result will be less toasty and more robust.
