Instructions

  1. 1

    1. In a large bowl, combine the bread flour, granulated sugar, salt, and instant dry yeast. Add the warm whole milk, 1 egg, and 1 tablespoon of the mandarin zest. Mix until a shaggy dough forms.

  2. 2

    2. Knead for 8 minutes by hand or 5 minutes with a mixer until the dough starts to smooth out. Gradually add the 80 g softened unsalted butter and continue kneading for 6 to 8 more minutes, until the dough is elastic, glossy, and slightly tacky.

  3. 3

    3. Shape into a ball, place in a lightly greased bowl, cover, and let rise in a warm spot for 60 to 75 minutes, or until doubled in size.

  4. 4

    4. While it rises, make the filling by mixing the 60 g softened unsalted butter, brown sugar, black sesame seeds, chopped dark chocolate, ground cinnamon, and the remaining tablespoon of mandarin zest into a spreadable paste.

  5. 5

    5. Grease a 9 x 13 in baking dish or pan with the melted butter. Set aside.

  6. 6

    6. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 12 x 16 in. Spread the filling evenly over the entire surface.

  7. 7

    7. Roll the dough up from the long side to form a firm log. Cut into 12 equal spirals and place them in the prepared pan, leaving a little space between each one.

  8. 8

    8. Cover the pan and let rise again for 35 to 45 minutes, until the buns are puffy and nearly touching.

  9. 9

    9. Preheat the oven to 350°F (175°C). Gently brush the spirals with the beaten egg.

  10. 10

    10. Bake for 22 to 25 minutes at 350°F (175°C), until deeply golden and fully baked through in the center. If they brown too quickly, loosely tent with foil for the last few minutes.

  11. 11

    11. While they bake, whisk together the powdered sugar, mandarin juice, and pinch of salt until you have a thick but pourable glaze.

  12. 12

    12. Let the spirals rest for 10 minutes out of the oven, then drizzle the mandarin glaze over the top. Serve warm or at room temperature.

Chef tips

Toast the black sesame in a dry skillet over medium heat for 1 to 2 minutes to intensify its aroma, then let it cool before mixing into the filling. For cleaner slices, chill the log for 10 minutes before cutting.

Substitutions

You can use a small orange instead of mandarin. The dark chocolate may be replaced with semisweet chocolate. If you do not have black sesame, use toasted white sesame instead, though the flavor and visual contrast will change.
