Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F. Toss the yellow plums with the brown sugar and lemon juice. Spread them on a small tray and roast for 12 minutes at 200 °C / 400 °F, until juicy but not collapsed. Let them cool completely.
- 2
2. While the fruit roasts, make the crunch topping: mix the chopped pistachios with the honey and ground cinnamon. Spread on a lined tray and bake for 6 minutes at 180 °C / 350 °F. Cool and break into small clusters with your hands.
- 3
3. For the dough, combine the bread flour, sugar, fine salt, and instant dry yeast in a large bowl. Add the warm milk, 1 egg, and 60 g softened butter. Knead for 10 to 12 minutes until the dough is smooth, elastic, and slightly glossy.
- 4
4. Place the dough in a lightly greased bowl, cover, and let rise for 75 to 90 minutes in a warm spot, until nearly doubled in size.
- 5
5. Make the filling by mixing 70 g softened butter with 50 g sugar and 10 ml orange blossom water until spreadable.
- 6
6. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 35 x 28 cm / 14 x 11 inches. Spread the orange blossom butter filling all over, leaving a 1 cm / 1/2 inch border.
- 7
7. Scatter the cooled roasted yellow plums over the filling, draining off any excess juice so the roll does not become too wet.
- 8
8. Roll the dough up from the long side into a firm log. Cut into 8 even pieces and place them in a greased or lined baking pan, leaving a little space between each one.
- 9
9. Cover the spirals and let them proof for 30 to 35 minutes, until puffy. Meanwhile, preheat the oven to 180 °C / 350 °F.
- 10
10. Brush the tops with the beaten egg and bake for 24 to 28 minutes at 180 °C / 350 °F, until the spirals are deeply golden.
- 11
11. Stir the powdered sugar with 15 ml milk and 5 ml orange blossom water to make a pourable glaze. Adjust with a few extra drops of milk if needed.
- 12
12. Let the spirals cool for 10 minutes, drizzle with the glaze, and finish with the pistachio crunch. Serve warm or at room temperature.
Chef tips
Drain the roasted fruit well before adding it to the dough to keep a defined spiral. If your kitchen is cool, let the dough rise inside a turned-off oven with a mug of hot water beside it.
Substitutions
You can replace the yellow plums with fresh apricots in the same amount. Pistachios may be swapped for chopped almonds for a different texture. Orange blossom water can be replaced with vanilla, though the flavor will be less floral.
