Instructions

  1. 1

    1. In a large bowl, combine the bread flour, granulated sugar, salt, and instant dry yeast.

  2. 2

    2. Add the warm whole milk, 1 egg, and the 60 g melted unsalted butter. Mix until a dough forms, then knead for 8 to 10 minutes until smooth and elastic.

  3. 3

    3. Place the dough in a lightly greased bowl, cover, and let rise for 60 to 70 minutes in a warm spot, until nearly doubled.

  4. 4

    4. While the dough rises, combine the dried cranberries with 30 ml orange juice and let them soak for 10 minutes. Drain lightly if excess liquid remains.

  5. 5

    5. Toast the sunflower seeds in a dry skillet over medium heat for 2 to 3 minutes, stirring constantly, until fragrant. Let cool.

  6. 6

    6. Make the filling by mixing the 90 g softened unsalted butter with the brown sugar, orange zest, lemon zest, and ground cinnamon until spreadable.

  7. 7

    7. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 40 x 30 cm / 16 x 12 inches.

  8. 8

    8. Spread the citrus butter filling evenly over the surface. Scatter the soaked cranberries and toasted sunflower seeds evenly on top.

  9. 9

    9. Roll up the dough from the long side into a tight log. Cut into 10 equal spirals.

  10. 10

    10. Arrange the spirals in a greased baking pan or on a baking tray, leaving a little space between them. Cover and proof for 20 minutes.

  11. 11

    11. Preheat the oven to 350°F / 175°C. Brush the spirals with the beaten egg.

  12. 12

    12. Bake for 22 to 25 minutes at 350°F / 175°C, until golden and cooked through in the center.

  13. 13

    13. While they bake, whisk the powdered sugar with the lemon juice and 10 ml orange juice until smooth.

  14. 14

    14. Let the spirals rest for 10 minutes after baking, then drizzle the glaze over the top before serving.

Chef tips

If the dough feels sticky at first, avoid adding too much extra flour; it becomes easier to handle after kneading. For a shinier finish, glaze the spirals while they are still slightly warm.

Substitutions

You can replace the dried cranberries with chopped dried cherries or golden raisins. Sunflower seeds can be swapped for toasted pumpkin seeds for a different flavor profile.
