Instructions

  1. 1

    1. In a large bowl, combine the bread flour, sugar, fine salt, instant dry yeast, and 2 g of the ground cardamom. Add the warm whole milk, 1 egg, and 80 g softened unsalted butter. Knead for 10 to 12 minutes until the dough is smooth, elastic, and slightly glossy.

  2. 2

    2. Shape the dough into a ball, place it in a lightly greased bowl, cover, and let it rise in a warm spot for 75 to 90 minutes, until nearly doubled in size.

  3. 3

    3. While the dough rises, place the pitted dates in a bowl with the hot water. Let them soften for 10 minutes. Drain, reserving 2 tablespoons of the soaking liquid.

  4. 4

    4. Blend the softened dates with 70 g softened unsalted butter, brown sugar, ground cinnamon, the remaining 2 g ground cardamom, and the reserved soaking liquid until you have a thick, spreadable paste. Fold in 15 g toasted sesame seeds and mix well.

  5. 5

    5. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 16 x 12 inches / 40 x 30 cm. Spread the date filling evenly over the surface, leaving a 1/2-inch border all around.

  6. 6

    6. Roll the dough up from the long side to make a tight log. Cut into 10 even spirals and place them in a greased baking pan or tray, leaving some space between them.

  7. 7

    7. Cover the spirals and let them rise again for 30 minutes, until puffy. Meanwhile, preheat the oven to 350°F / 180°C.

  8. 8

    8. Brush the tops of the spirals with the beaten egg and sprinkle the remaining 10 g toasted sesame seeds over them.

  9. 9

    9. Bake for 22 to 25 minutes at 350°F / 180°C, until deeply golden and baked through in the center.

  10. 10

    10. Stir the honey with 1 tablespoon water and brush over the spirals as soon as they come out of the oven for shine and a soft finish. Let cool for 15 minutes before serving.

Chef tips

If the dates are very dry, add 1 extra tablespoon of the soaking liquid when blending. For cleaner spirals, chill the rolled log for 10 minutes before slicing.

Substitutions

You can substitute whole milk with reduced-fat milk. The finishing honey can be replaced with maple syrup, though the flavor will be less floral. The cardamom can be reduced if you prefer a milder profile.
