Instructions
- 1
1. In a large bowl, combine the bread flour, granulated sugar, salt, and instant dry yeast.
- 2
2. Add the warm whole milk, 1 egg, and vanilla extract. Mix until a rough dough forms.
- 3
3. Gradually incorporate the 80 g softened butter for the dough and knead for 10 to 12 minutes, until the dough is smooth, elastic, and slightly glossy.
- 4
4. Place the dough in a lightly greased bowl, cover, and let it rise for 75 to 90 minutes, until nearly doubled in size, in a warm spot around 75°F to 80°F (24°C to 27°C).
- 5
5. Meanwhile, make the filling by mixing the 90 g softened butter with the brown sugar and matcha powder until it becomes a smooth paste.
- 6
6. Wash and carefully dry the fresh raspberries. Halve them if large and toss them with the cornstarch to help control excess juice during baking.
- 7
7. Lightly grease a 9 x 13 inch baking pan or baking tray and, if desired, line it with parchment paper.
- 8
8. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 40 x 30 cm, or 16 x 12 inches.
- 9
9. Spread the matcha butter evenly over the dough, leaving a 1 cm border on one of the long sides.
- 10
10. Scatter the prepared raspberries over the filling and sprinkle the toasted sliced almonds on top.
- 11
11. Roll the dough up from the long side into a firm log. Seal the final edge by pressing gently.
- 12
12. Cut the log into 10 equal pieces and arrange them in the prepared pan, leaving a little space between each spiral.
- 13
13. Cover the pan and let the spirals proof again for 30 to 40 minutes, until puffed.
- 14
14. Preheat the oven to 350°F (175°C). Gently brush the spirals with the beaten egg.
- 15
15. Bake for 22 to 25 minutes at 350°F (175°C), until golden around the edges and baked through in the center.
- 16
16. Remove from the oven and let rest in the pan for 10 minutes.
- 17
17. For the glaze, whisk together the powdered sugar, whole milk, lemon juice, and a pinch of salt until smooth and pourable but still thick.
- 18
18. Drizzle the glaze over the warm spirals and serve.
Chef tips
Toast the sliced almonds for 5 to 7 minutes at 320°F (160°C) to deepen their flavor before using. If the raspberries are very ripe, chill them for 15 minutes before filling so they hold their shape better while rolling.
Substitutions
You can replace the almonds with pistachios or pecans for a different flavor profile. Whole milk can be swapped for reduced-fat milk, though the crumb will be slightly less rich. Fresh raspberries may be replaced with well-drained frozen raspberries.
