Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Pat the flank steak dry with paper towels. In a small bowl, mix the white sesame seeds, black sesame seeds, ground cumin, smoked paprika, 2 grated garlic cloves, 4 g salt, black pepper, and 1 tablespoon olive oil.

  2. 2

    2. Rub the mixture over both sides of the flank steak and let it rest for 10 minutes at room temperature while you prepare the vegetables.

  3. 3

    3. Place the eggplants cut side up on a sheet pan. Score the flesh lightly, drizzle with 1 tablespoon olive oil, add 2 chopped garlic cloves, and season with 3 g salt. Roast at 220 °C / 425 °F for 25 to 30 minutes, until very soft and browned around the edges.

  4. 4

    4. While the eggplants roast, heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon olive oil and sear the flank steak for 2 minutes per side to brown the sesame crust.

  5. 5

    5. Transfer the skillet with the beef to the oven at 220 °C / 425 °F and cook for 6 to 8 minutes for medium-rare, or until it reaches an internal temperature of 57 °C / 135 °F. Remove the meat, transfer to a board, and rest for 10 minutes before slicing.

  6. 6

    6. For the mash, scoop the roasted eggplant flesh into a processor or bowl. Add the Greek yogurt, lemon zest, and 1 tablespoon lemon juice, then blend or mash until creamy. Adjust with a little more salt if needed.

  7. 7

    7. For the warm salad, combine the cucumber, red onion, parsley, and mint in a bowl. In a small pan or microwave, gently warm the red wine vinegar with the honey, the remaining 1/2 tablespoon lemon juice, the remaining 1/2 tablespoon olive oil, and a pinch of salt; pour the warm dressing over the salad and toss.

  8. 8

    8. Slice the flank steak thinly against the grain. Spoon the smoky eggplant mash onto plates, arrange the beef on top, and finish with the warm cucumber herb salad.

  9. 9

    9. If desired, let the plated dish sit for 1 minute before serving so the meat juices can mingle with the mash and salad.

Chef tips

For a better-adhering crust, firmly press the sesame mixture onto the beef before searing. Do not skip the resting time; it helps keep the meat juicy when sliced.

Substitutions

You can swap flank steak for skirt steak or flap steak. If you prefer not to use Greek yogurt, use thick plain yogurt instead. Parsley can be replaced with cilantro for a more herbal profile.
