Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Place the sweet potato cubes on a sheet pan and toss with 15 ml (1 tbsp) olive oil, 3 g (1/2 tsp) salt, and a pinch of black pepper. Roast for 25 to 30 minutes, turning halfway, until very tender and lightly browned on the edges.
- 2
While the sweet potatoes roast, make the butter. In a bowl, mix the unsalted butter, crushed cascabel chile, lime zest, lime juice, and a pinch of salt until evenly combined. Set aside at room temperature.
- 3
When the sweet potatoes are ready, transfer them to a bowl and mash with the heavy cream, 1 grated garlic clove, 2 g (about 1/4 tsp) salt, and a little black pepper. If you want a looser texture, add up to 30 ml (2 tbsp) water. Keep warm.
- 4
Pat the beef steaks dry with paper towels and season both sides with the remaining salt and black pepper.
- 5
Heat a large heavy skillet over medium-high heat for 2 minutes. Add the remaining olive oil and sear the beef steaks for 3 to 4 minutes per side for medium, or until they reach an internal temperature of 57 to 60 °C / 135 to 140 °F. Cook longer if you prefer a different doneness.
- 6
Transfer the steaks to a plate and let them rest for 5 minutes. Top each steak with a portion of the cascabel chile lime butter so it melts over the meat.
- 7
In the same skillet, add the green beans and 30 ml (2 tbsp) water. Cook for 2 minutes, then add the 2 minced garlic cloves and sauté 2 to 3 minutes more until the beans are tender-crisp. Add the toasted sesame seeds, toss, and adjust with a pinch of salt.
- 8
Serve a bed of roasted sweet potato mash on each plate, place the beef steak on top or alongside with the melted butter, finish with the sesame green beans, and sprinkle with chopped chives.
Chef tips
For a better crust on the meat, let the steaks sit at room temperature for 15 minutes before cooking and avoid moving them during the initial sear. Toast the sesame seeds in a dry pan for 1 to 2 minutes to deepen their flavor.
Substitutions
You can use ribeye, New York strip, or top sirloin instead of strip steak. Sweet potato can be replaced with roasted butternut squash. If you do not have cascabel chile, use a mild mix of ground ancho chile and a pinch of chile flakes. For a dairy-free version, replace the butter with plant-based butter and the cream with an unsweetened creamy plant-based alternative.
