Instructions

  1. 1

Preheat the Air Fryer to 190°C / 375°F for 3 minutes.

  2. 2

Cut the red onions into 8 wedges each and gently separate the larger petals. In a bowl, toss the onion petals with 15 ml (1 tbsp) olive oil, the honey, 1 teaspoon sumac, salt, and black pepper until evenly coated.

  3. 3

Arrange the onion petals in the Air Fryer basket in a single layer without overcrowding. Cook at 190°C / 375°F for 10 to 14 minutes, shaking the basket halfway through, until tender, browned, and lightly crisp on the edges.

  4. 4

While the onions cook, make the cream: in a small processor or using a fork, combine the feta cheese, Greek yogurt, the remaining 15 ml (1 tbsp) olive oil, lemon zest, lemon juice, and garlic until thick and spreadable.

  5. 5

Taste the cream and adjust with an extra pinch of salt if needed. Spread the lemon feta cream onto a serving plate or platter.

  6. 6

Arrange the hot onion petals on top. Drizzle with pomegranate molasses and sprinkle with the remaining teaspoon of sumac.

  7. 7

Finish with the pomegranate seeds, chopped fresh mint, and toasted pistachios. Serve immediately while warm for the best contrast between the caramelized onions and the cool cream.

Chef tips

For crispier edges, pat the onion petals very dry before seasoning and cook in batches so the basket is not crowded. The cream can be made a few hours ahead and kept refrigerated.

Substitutions

You can swap the pistachios for walnuts or almonds if other tree nuts are acceptable. Mint can be replaced with parsley or dill. If you do not have pomegranate molasses, use a little extra lemon juice and a very light drizzle of honey for balance.
