Instructions

  1. 1

Preheat the air fryer to 190°C / 375°F for 3 minutes.

  2. 2

Cut the green cabbage into 8 wedges, keeping some of the core attached to each piece so they hold together.

  3. 3

In a small bowl, mix 15 ml (1 tbsp) olive oil with the smoked paprika, garlic powder, 3 g (1/2 tsp) salt, and black pepper.

  4. 4

Brush or rub the cabbage wedges with the seasoned oil mixture, coating both sides.

  5. 5

Arrange the wedges in the air fryer basket in a single layer. Cook at 190°C / 375°F for 10 minutes.

  6. 6

Meanwhile, make the glaze by mixing the honey, chili sauce, and 7 ml (1/2 tbsp) lemon juice in a small bowl.

  7. 7

In another bowl, mash or blend the feta cheese with the Greek yogurt, lemon zest, the remaining 15 ml (1 tbsp) lemon juice, 15 ml (1 tbsp) olive oil, and 2 g (1/2 tsp) salt until thick and spreadable.

  8. 8

Lightly toast the sesame seeds in a dry skillet over medium heat for 1 to 2 minutes until fragrant. Remove from the heat and set aside.

  9. 9

Open the air fryer, flip the cabbage wedges, and brush them with the honey-chili glaze. Cook again at 190°C / 375°F for 8 more minutes, or until the edges are deeply browned and the centers are tender.

  10. 10

To serve, spread the whipped feta on a platter or place a portion on each plate. Arrange the hot cabbage wedges on top, spoon over any remaining glaze, sprinkle with the toasted sesame seeds, and finish with the chopped chives.

  11. 11

Serve immediately, with a little extra lemon zest if desired.

Chef tips

If your air fryer is small, cook the wedges in batches so they brown properly. The cabbage should have charred tips but not be burnt. For a softer texture, add 2 extra minutes of cooking time.

Substitutions

You can substitute the feta with soft goat cheese, though the flavor will be stronger. Chives can be replaced with parsley. For less heat, use only 5 ml (1 tsp) chili sauce.
