Instructions

  1. 1

Place the potatoes in a pot with cold water and 1/2 tsp salt. Bring to a boil and cook for 10-12 minutes, until tender. Drain very well and mash until you have a thick puree; let it cool for 10 minutes so excess steam can escape.

  2. 2

Meanwhile, heat 1 tsp olive oil in a small skillet over medium heat. Add the chopped spinach, 1 grated garlic clove, and a pinch of salt. Cook for 1-2 minutes, just until the spinach wilts and extra moisture evaporates. Let cool.

  3. 3

In a large bowl, mix the mashed potatoes, sautéed spinach, Parmesan, panko, egg, cornstarch, chives, 1/2 tsp smoked paprika, lemon zest, 1/4 tsp black pepper, and the remaining salt to taste. Mix until you get a moldable dough. If it feels too soft, add 1-2 extra tbsp panko.

  4. 4

In a small bowl, combine the crumbled feta with 1 tsp lemon juice, 1 tsp olive oil, and a pinch of black pepper. Press lightly with a fork to make a creamy filling.

  5. 5

Divide the potato mixture into 8 portions. Take one portion, shape it into a ball, and flatten it. Place a heaping teaspoon of feta filling in the center, seal it, and gently flatten again into a 3-inch disc. With your fingers, lightly pinch the edges in 6-8 spots to create a sunburst shape. Repeat with the remaining mixture.

  6. 6

Preheat the Air Fryer to 380°F (195°C) for 3 minutes. Brush or spray the sunbursts with half of the remaining olive oil.

  7. 7

Arrange the sunbursts in the basket in a single layer, leaving space between them. Cook at 380°F (195°C) for 9 minutes. Carefully flip, brush with the remaining oil, and cook 7-9 minutes more at 380°F (195°C), until deeply golden and crisp outside.

  8. 8

While they cook, make the sauce: in a blender or food processor combine the roasted red pepper, Greek yogurt, the remaining garlic clove, 1 tbsp lemon juice, the remaining 1/2 tsp smoked paprika, dried oregano, and 1 tsp olive oil. Blend until smooth. Taste and adjust with salt and black pepper.

  9. 9

Serve the sunbursts hot with the roasted pepper sauce on the side or spread onto the plate. If desired, finish with a little extra chives on top.

Chef tips

Drying the potatoes well after boiling helps the sunbursts stay firm and crisp. If your Air Fryer is small, cook them in batches so they do not overlap.

Substitutions

You can swap the feta for firm goat cheese or well-drained ricotta. Parmesan can be replaced with pecorino. For a gluten-free version, use gluten-free panko.
