1. Preheat the oven to 220°C / 425°F. Toss the baby potatoes with 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon smoked paprika, the ground cumin, 1 chopped garlic clove, and half of the fresh thyme. Spread on a sheet pan and roast for 30 to 35 minutes at 220°C / 425°F, turning halfway through, until golden and crisp.

2. While the potatoes roast, make the quick pickles. In a bowl, combine the cucumber, red onion, apple cider vinegar, water, honey, lemon juice, 1/2 teaspoon salt, a pinch of black pepper, and the red pepper flakes if using. Mix well and let stand for 15 to 20 minutes.
- 3
3. In another small bowl, mix the unsalted butter with the remaining 1 teaspoon smoked paprika, 2 grated garlic cloves, the rest of the fresh thyme, chopped parsley, and a pinch of salt. Set aside.
- 4
4. Pat the beef very dry with paper towels. Season both sides with the remaining salt and black pepper.
- 5
5. Heat a large cast-iron or heavy skillet over medium-high heat for 2 to 3 minutes. Add the remaining 1 tablespoon olive oil and, once hot, sear the beef for 3 to 4 minutes on the first side and 3 to 4 minutes on the second side for medium, adjusting for thickness. Aim for an internal temperature of about 57°C / 135°F for medium-rare or 63°C / 145°F for medium.
- 6
6. Transfer the beef to a board and immediately spread the smoked paprika butter over the hot surface. Let the meat rest for 8 minutes so the juices redistribute.
- 7
7. Lightly drain the quick pickles. Slice the beef thinly against the grain.
- 8
8. Serve a bed of crispy potatoes on each plate, arrange the sliced beef on top, and finish with the quick pickles. Spoon the resting juices from the meat over everything and serve right away.
Chef tips
For a better crust on the beef, do not move the steak while it sears. If you want even crispier potatoes, preheat the sheet pan in the oven for 5 minutes before adding them.
Substitutions
You can use ribeye, New York strip, or top sirloin. Honey can be replaced with maple syrup. Parsley can be swapped for chives or cilantro. For a dairy-free version, use a dairy-free plant-based butter.
