Instructions
- 1
1. Peel the turnips and cut them into 1/2-inch thick half moons. Pat them very dry with a kitchen towel or paper towel so the coating adheres better.
- 2
2. In a large bowl, combine the grated Parmesan, sesame seeds, panko, garlic powder, sweet paprika, 1/2 teaspoon of the salt, and the black pepper.
- 3
3. Add the turnip half moons to the large bowl, drizzle with the olive oil, and toss well to coat. Add the Parmesan, sesame, and panko mixture, and toss until all the pieces are evenly coated.
- 4
4. Preheat the Air Fryer to 390°F / 200°C for 3 minutes.
- 5
5. Arrange the turnips in the Air Fryer basket in a single layer without overcrowding. Cook at 390°F / 200°C for 12 to 14 minutes, flipping halfway through, until golden, crisp on the edges, and tender in the center.
- 6
6. While the turnips cook, make the cream: in a medium bowl, mix the ricotta, Greek yogurt, lemon zest, lemon juice, chives, honey, and the remaining 1/4 teaspoon salt until smooth.
- 7
7. Taste the lemon chive ricotta cream and adjust with a little more salt if needed.
- 8
8. Serve the hot turnip moons over a layer of lemon chive ricotta cream, or with the cream on the side for dipping.
Chef tips
If your Air Fryer is small, cook in two batches to keep the exterior crisp. Drying the turnips well before adding the oil helps the crust stick and brown better.
Substitutions
You can swap the ricotta for well-blended cottage cheese. Chives can be replaced with parsley or fresh dill. For a gluten-free version, use gluten-free panko.
