Instructions
- 1
In a large bowl, finely chop the hearts of palm and mix them with the lightly crushed oats, Parmesan cheese, beaten egg, red onion, 1 garlic clove, 2 tablespoons of the parsley, 1/2 teaspoon lemon zest, 1 tablespoon lemon juice, black pepper, 1/2 teaspoon salt, smoked paprika, and 1 tablespoon olive oil.
- 2
Let the mixture rest for 5 minutes so the oats can absorb some of the moisture. Then shape into 8 compact fritters of equal size.
- 3
Preheat the air fryer to 380°F (195°C) for 3 minutes. Lightly grease the basket or line it with perforated air-fryer parchment and brush with a little oil.
- 4
Arrange the fritters in a single layer without overlapping. Cook at 380°F (195°C) for 8 minutes. Carefully flip and cook for 6 to 8 minutes more at 380°F (195°C), until golden and firm.
- 5
Meanwhile, make the cream by mixing the Greek yogurt with the chopped capers, the remaining garlic clove, the remaining lemon zest, the remaining tablespoon of lemon juice, the remaining salt, and the remaining parsley.
- 6
Serve the fritters hot with the lemon, caper, and parsley cream on top or on the side. If desired, finish with a little extra grated Parmesan and an extra pinch of black pepper.
Chef tips
For a firmer texture, chill the mixture for 10 minutes before shaping the fritters. If the hearts of palm are very wet, pat them dry well with paper towels before chopping.
Substitutions
You can replace the Parmesan with finely grated aged Manchego. Greek yogurt can be replaced with thick plain yogurt. If you do not have red onion, use white onion in the same amount.
