Instructions

  1. 1

Preheat the air fryer to 190°C / 375°F for 3 minutes.

  2. 2

Pat the beet slices dry with paper towels and toss them in a bowl with 15 ml (1 tbsp) olive oil, 2 g (about 1/2 tsp) salt, and 1 g (1/4 tsp) black pepper.

  3. 3

In another bowl, combine the chopped pistachios, breadcrumbs, garlic powder, and half of the thyme leaves.

  4. 4

Dip each beet slice into the beaten egg, then coat it with the pistachio-breadcrumb mixture, pressing gently so the crust adheres well.

  5. 5

Arrange the beet medallions in the air fryer basket in a single layer. Drizzle or brush with the remaining 15 ml (1 tbsp) olive oil. Cook at 190°C / 375°F for 16 to 18 minutes, flipping halfway through, until tender and golden.

  6. 6

Meanwhile, whip the soft goat cheese with the Greek yogurt, orange zest, 1 g (about 1/4 tsp) salt, and the remaining black pepper until smooth.

  7. 7

Toss the orange segments with the honey, balsamic vinegar, and the rest of the thyme. Let them sit for 5 minutes to absorb the flavors.

  8. 8

Spread the whipped goat cheese on a serving platter or individual plates. Top with the hot beet medallions and finish with the dressed orange segments and any juices they released. Serve immediately.

Chef tips

For a more even crust, chop the pistachios to a coarse crumb texture and press firmly before air frying. If your beets are very large, cut them into half-moons so they fit the basket better.

Substitutions

You can swap the goat cheese for thick ricotta or cream cheese. Honey can be replaced with maple syrup, and thyme with very finely chopped rosemary. For a gluten-free version, use gluten-free breadcrumbs.
