Instructions

  1. 1

Preheat the oven to 375°F (190°C). Spread the shredded coconut on a tray and toast it for 4 to 6 minutes, stirring once, until lightly golden. Remove and let cool. Lower the oven setting; later you will bake the pinwheels at 350°F (175°C).

  2. 2

In a large bowl, combine the bread flour, granulated sugar, salt, and instant dry yeast.

  3. 3

Add the warm whole milk, egg, melted unsalted butter, and vanilla extract. Mix until a dough forms, then knead for 8 to 10 minutes until smooth and elastic.

  4. 4

Place the dough in a lightly greased bowl, cover, and let it rest in a warm spot for 20 to 25 minutes until puffy and slightly increased in volume.

  5. 5

While the dough rests, make the filling. In a bowl, mix the cream cheese, light brown sugar, cornstarch, finely chopped kaffir lime leaves, and the cooled toasted coconut until thick and spreadable.

  6. 6

In a skillet over medium heat, melt 15 g (1 tbsp) unsalted butter. Add the diced fresh pineapple, 12 g (1 tbsp) granulated sugar, and 15 ml (1 tbsp) lime juice. Cook for 4 to 5 minutes until the pineapple is golden and most of the moisture has evaporated. Let cool completely.

  7. 7

Once the dough has rested, place it on a lightly floured surface and roll it into a rectangle about 12 x 16 inches (30 x 40 cm).

  8. 8

Spread the toasted coconut cream over the dough, leaving a 1 cm border. Scatter the cooled golden pineapple evenly on top.

  9. 9

Roll the dough up from the long side to form a firm log. Cut into 8 equal pieces and place them in a greased pan or on a tray with space between them.

  10. 10

Cover the pinwheels and let them rest for 10 minutes while you preheat the oven to 350°F (175°C).

  11. 11

Bake for 22 to 26 minutes at 350°F (175°C) until puffed and golden on top.

  12. 12

While they bake, whisk together the powdered sugar, 20 ml (1 tbsp + 1 tsp) lime juice, and 10 ml (2 tsp) whole milk until you have a thick but pourable glaze.

  13. 13

Let the pinwheels cool for 10 minutes. Drizzle with the lime glaze and serve warm or at room temperature.

Chef tips

Toast the coconut only to a light golden color so it keeps a clean flavor and does not turn bitter. Cool the pineapple completely before filling so the dough does not become too wet.

Substitutions

You can replace the fresh pineapple with firm diced mango. If kaffir lime leaves are unavailable, use a small amount of finely grated lime zest for a different but still aromatic profile.
