Instructions
- 1
Place the yuca in a pot with enough water to cover and 1/2 teaspoon of the salt. Bring to a boil and cook for 12 to 15 minutes, until just tender but not falling apart. Drain well and remove any tough central fibers if they loosen easily.
- 2
In a large bowl, toss the yuca with 1 tablespoon of the olive oil, the black pepper, garlic powder, smoked paprika, and an additional 1/4 teaspoon salt. Mix gently so all the coins are coated without breaking them.
- 3
Preheat the air fryer to 390°F / 200°C for 3 minutes. Arrange the yuca in a single layer and cook for 12 to 14 minutes at 390°F / 200°C, turning halfway through, until golden with crisp edges.
- 4
Meanwhile, make the crispy crumbs: mix the Parmesan, panko, and the remaining 1/2 tablespoon olive oil. Place the mixture in a small pan or on air fryer-safe paper and cook in the air fryer at 350°F / 175°C for 4 to 5 minutes, stirring once, until golden. Set aside.
- 5
For the cream, blend or mash the avocado with the Greek yogurt, cilantro, lime juice, lime zest, honey, and the remaining 1/4 teaspoon salt until smooth and creamy.
- 6
Serve the hot yuca coins over or alongside spoonfuls of cilantro avocado cream. Finish with the crispy cheese crumbs and chopped chives on top.
Chef tips
Do not overcook the yuca during the initial boil; it should stay firm so it holds its shape in the air fryer. For extra brightness, add a few more drops of lime right before serving.
Substitutions
You can replace the Parmesan with finely grated aged Manchego. Greek yogurt can be swapped for thick plain yogurt. If you do not have chives, use a little very finely chopped green onion.
