Instructions

  1. 1

    Preheat the oven to 200 °C / 400 °F.

  2. 2

Season the chicken thighs on both sides with the salt, black pepper, and garlic powder.

  3. 3

Heat a large oven-safe skillet over medium-high heat. Add the olive oil and sear the chicken thighs for 3 to 4 minutes per side, until nicely browned. Transfer them temporarily to a plate.

  4. 4

Reduce to medium heat and add the butter to the same skillet. Stir in the minced garlic and cook for 30 seconds, stirring constantly so it does not burn.

  5. 5

Add the roasted red pepper, green olives, dried oregano, and red pepper flakes. Cook for 2 minutes to deepen the flavors.

  6. 6

Pour in the chicken broth and heavy cream. Stir and cook for 2 minutes over medium heat. Add the goat cheese in pieces and mix until the sauce becomes smooth and creamy.

  7. 7

Add the baby spinach and cook for 1 minute, just until slightly wilted.

  8. 8

Return the chicken to the skillet along with any accumulated juices. Transfer the skillet to the oven and bake at 200 °C / 400 °F for 12 to 15 minutes, or until the chicken is fully cooked.

  9. 9

Remove the skillet from the oven and finish with the fresh parsley and lemon zest on top. Taste the sauce and adjust the salt if needed.

  10. 10

Serve hot, spooning the goat cheese, roasted red pepper, and olive sauce around the chicken thighs.

Chef tips

For a thicker sauce, let it simmer gently for 1 to 2 extra minutes before transferring the skillet to the oven. If you want a deeper golden finish, place the chicken under the broiler for 1 to 2 minutes at the end, watching closely.

Substitutions

You can replace the goat cheese with cream cheese for a milder flavor. Baby spinach can be swapped for tender Swiss chard. If you do not have green olives, use black olives, though the flavor will be less bright.
