2. In a bowl, toss the turnip wedges with 1 1/2 tablespoons olive oil, honey, smoked paprika, garlic powder, 1/2 teaspoon salt, and black pepper until evenly coated.
- 3
3. Arrange the turnips in the Air Fryer basket in a single layer. Cook at 190 °C / 375 °F for 12 minutes, shaking the basket halfway through.
- 4
4. Meanwhile, stir together the ricotta, lemon juice, lemon zest, chopped rosemary, the remaining 1/4 teaspoon salt, and 1/2 tablespoon olive oil until smooth and creamy.
- 5
5. In a small bowl, toss the sunflower seeds with the remaining 1/2 tablespoon olive oil. Add them to the Air Fryer basket alongside the turnips and cook everything for 5 more minutes at 200 °C / 400 °F, until the turnips are deeply golden and the seeds are crisp.
- 6
6. Spread the rosemary ricotta onto a serving platter or individual plates. Arrange the glazed turnips on top and scatter over the crispy sunflower seeds.
- 7
7. Serve immediately to enjoy the contrast of cool ricotta, hot glazed turnips, and toasted seeds.
Chef tips
If your turnips are very large, cut them into even pieces so they cook at the same rate. Do not overcrowd the basket or they will brown less effectively.
Substitutions
You can replace ricotta with creamy cottage cheese or thick whipped fresh cheese. Sunflower seeds can be swapped for pumpkin seeds if preferred.
