Instructions

  1. 1

    Preheat the air fryer to 180 °C / 350 °F for 3 minutes.

  2. 2

Peel the red onions, cut them in half lengthwise, and remove part of the center from each half, leaving 2 to 3 outer layers intact to form nests. Finely chop some of the removed onion to make about 3 tablespoons.

  3. 3

In a bowl, combine the halloumi cubes with the chopped walnuts, reserved chopped onion, half of the olive oil, the fresh thyme leaves, garlic powder, and black pepper.

  4. 4

Brush the onion nests with the remaining olive oil and season lightly with the salt. Fill each nest with the halloumi mixture, pressing gently so it stays in place.

  5. 5

Place the filled nests in the air fryer basket in a single layer. Cook at 180 °C / 350 °F for 12 minutes.

  6. 6

Meanwhile, make the glaze by mixing the pomegranate molasses, lemon juice, and honey in a small bowl until smooth.

  7. 7

Open the air fryer, brush or drizzle the nests with the glaze, and cook 4 minutes more at 190 °C / 375 °F, until the halloumi is golden and the onion edges are tender and lightly caramelized.

  8. 8

Carefully remove, finish with lemon zest and extra fresh thyme leaves, and serve hot.

Chef tips

If the onions are very round and wobble, slice a very thin piece off the base of each half to stabilize them without piercing the bottom. Do not overfill the nests to prevent the cheese from spilling out as it softens.

Substitutions

You can replace the walnuts with pistachios or pecans. If you do not have pomegranate molasses, mix 1 tablespoon balsamic reduction with 1 tablespoon pomegranate juice or a little extra honey and lemon, though the flavor will be different.
