Instructions

  1. 1

    1. Preheat the Air Fryer to 375 °F / 190 °C for 3 minutes. Lightly grease the basket or a small Air Fryer-safe pan with a little olive oil.

  2. 2

    2. Place the shredded potato in a clean kitchen towel and squeeze very well to remove as much moisture as possible. Transfer it to a large bowl.

  3. 3

    3. Add the sliced leek, beaten egg, all-purpose flour, half of the fresh thyme, salt, black pepper, and olive oil to the bowl. Mix until evenly combined.

  4. 4

    4. Divide the mixture into 4 portions and shape 4 compact nests, pressing the center of each one to create a hollow. Place them in the Air Fryer basket with a little space between them.

  5. 5

    5. Cook the nests at 375 °F / 190 °C for 10 minutes. Open the Air Fryer, carefully flip each nest, and cook for 5 more minutes at 375 °F / 190 °C, until golden and crisp around the edges.

  6. 6

    6. While the nests cook, melt the butter in a small skillet over medium heat. Add the apple, honey, and the remaining fresh thyme. Sauté for 2 to 3 minutes until the apple is glossy and just tender, without falling apart.

  7. 7

    7. Remove the basket, place cubes of Brie in the center of each nest, and cook again at 350 °F / 175 °C for 3 minutes, or until the Brie is melted.

  8. 8

    8. Serve the nests hot and finish with the sautéed apple on top or alongside each portion.

Chef tips

Drying the potato thoroughly is key for a crispy texture. If you prefer, you can shape the nests in small silicone molds so they hold their form better.

Substitutions

You can substitute the Brie with Camembert or soft mozzarella. Red apple can be replaced with firm pear. For an egg-free version, try 1 tablespoon of ground flax soaked in water, though the texture will be slightly less firm.
