Instructions
- 1
Preheat the oven to 190 °C / 375 °F. Lightly grease a small baking dish or an oven-safe skillet about 20 cm / 8 in wide with the neutral oil.
- 2
In a small skillet over medium heat, melt the butter. Add the nectarines, half of the honey, the vanilla extract, and half of the cinnamon. Cook for 4 to 5 minutes, stirring gently, until the fruit is glossy and just tender. Remove from the heat.
- 3
In a large bowl, whisk together the Greek yogurt, eggs, and lemon zest until smooth.
- 4
Add the rolled oats, oat flour, baking powder, salt, and the remaining cinnamon. Stir until combined, then let the mixture rest for 3 minutes so the oats absorb some moisture.
- 5
Pour the batter into the prepared dish. Spoon the cooked nectarines and their juices over the top and sprinkle with the sliced almonds.
- 6
Bake for 20 to 22 minutes at 190 °C / 375 °F, until the center is set and the surface is golden around the edges.
- 7
Let it rest for 5 minutes before serving. Finish with the remaining honey on top and serve warm.
Chef tips
For a fluffier texture, whisk the eggs for 1 minute before combining them with the yogurt. Nectarines can be replaced with firm peaches when out of season.
Substitutions
You can swap the almonds for sunflower seeds if you need to avoid tree nuts. Greek yogurt can be replaced with thick plain yogurt, though the texture will be slightly less creamy.
