Instructions

  1. 1

    1. Preheat the oven to 400°F / 200°C for the plums. Toss the diced plums with brown sugar and lemon juice, spread on a small tray, and roast for 15 minutes until tender and slightly concentrated. Let cool completely.

  2. 2

    2. In a large bowl, combine the bread flour, sugar, fine salt, and instant dry yeast. Add the warm milk and 1 egg, then mix until a dough forms.

  3. 3

    3. Gradually incorporate the 80 g softened butter for the dough and knead for 10 to 12 minutes until the dough is smooth, elastic, and only slightly tacky.

  4. 4

    4. Shape into a ball, place in a lightly greased bowl, cover, and let rise for 60 to 75 minutes in a warm spot until nearly doubled in size.

  5. 5

    5. While the dough rises, make the filling by mixing the 90 g softened butter with the dried culinary lavender, ground cinnamon, and chopped toasted pecans. Set aside.

  6. 6

    6. Once risen, transfer the dough to a work surface lightly dusted with the all-purpose flour and roll it into a rectangle about 16 x 12 inches.

  7. 7

    7. Spread the lavender butter evenly over the dough. Scatter the cooled roasted plums on top, draining off any excess juices so the filling stays in place.

  8. 8

    8. Fold the dough into thirds like a letter, starting from the long side. Press gently and chill the folded dough for 10 minutes to make slicing easier.

  9. 9

    9. Preheat the oven to 375°F / 190°C. Cut the dough into 10 equal strips. Take each strip, twist it several times, and tie it into a knot, tucking the ends underneath.

  10. 10

    10. Place the knots on a lined baking sheet, leaving space between them. Mix the beaten egg with the water and brush each knot. Cover loosely and proof for 25 to 30 minutes until slightly puffy.

  11. 11

    11. Bake for 15 to 18 minutes at 375°F / 190°C until the knots are golden and baked through. Transfer to a rack and let cool slightly.

  12. 12

    12. For the glaze, stir together the powdered sugar, milk, and vanilla extract until smooth and pourable but thick. Drizzle over the warm knots before serving.

Chef tips

Use culinary lavender sparingly to keep the floral note delicate. If the plums are very juicy, let them cool on paper towels before using. Toasting the pecans deepens their flavor and helps them keep some texture in the filling.

Substitutions

You can replace pecans with walnuts if preferred. Red plums can be swapped for firm black plums. Whole milk may be replaced with reduced-fat milk, though the crumb will be slightly less rich.
