Instructions

1. Preheat the oven to 220 °C / 425 °F. Place the pumpkin on a baking tray, add 1 grated garlic clove, 2 tablespoons olive oil, 1/2 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss well and roast for 25 to 30 minutes, turning halfway, until the pumpkin is tender and golden.

2. While the pumpkin roasts, drain the soaked red lentils. Blend them with the gluten-free oats, egg, water, 1 garlic clove, 1/2 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 3/4 teaspoon salt, and 1/4 teaspoon black pepper until you get a thick, fairly smooth batter. Let the batter rest for 10 minutes.

3. In a small bowl, mix the Greek yogurt with the lemon zest, 1 tablespoon lemon juice, half of the chopped chives, and a pinch of salt. Chill until needed.

4. Heat a small skillet with a thin layer of olive oil over medium heat. Pour portions of batter to make 8 small pancakes. Cook each one for 2 to 3 minutes per side until golden and cooked through in the center. Add more oil between batches if needed.

5. In a separate small pan, heat 1 teaspoon of the remaining oil over medium-low heat. Fry the sage leaves for 20 to 30 seconds until crisp. Remove and drain on paper towel. In the same pan, toast the pumpkin seeds for 1 to 2 minutes, stirring, until fragrant.
- 6
6. To serve, place two pancakes on each plate, spoon the roasted pumpkin over them, add dollops of lemon yogurt, and finish with the crispy sage, toasted pumpkin seeds, and the remaining chopped chives.

7. Serve immediately to enjoy the contrast of the warm pancakes, caramelized pumpkin, cool yogurt, and crisp sage.
Chef tips
If the batter becomes too thick after resting, add 1 to 2 tablespoons of water. For more even pancakes, use a 1/4-cup measure for each one.
Substitutions
You can replace the pumpkin with cubed sweet potato. Greek yogurt can be swapped for thick plain yogurt. If you do not have chives, use chopped fresh parsley.
