Instructions

  1. 1

    Preheat the oven to 375°F / 190°C. Lightly grease a 9 x 13-inch (23 x 33 cm) baking dish with a little of the vegetable oil.

  2. 2

In a bowl, combine the shrimp with the minced garlic, lime juice, dried oregano, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon vegetable oil. Let stand for 10 minutes while you prepare the remaining ingredients.

  3. 3

Heat a large skillet over medium-high heat. Add 1 tablespoon vegetable oil and sauté the red onion and sweet peppers for 3 to 4 minutes until softened. Add the marinated shrimp and cook for 2 to 3 minutes, just until they turn opaque. Stir in half of the chopped cilantro, then remove from the heat.

  4. 4

Place 2 cups of the sweet corn, the coconut milk, eggs, melted butter, fine cornmeal, 1 teaspoon salt, and the remaining black pepper in a blender. Blend until smooth and creamy. Transfer to a large bowl and stir in the remaining 1 cup of sweet corn.

  5. 5

Pour half of the corn mixture into the greased baking dish. Spread the shrimp mixture with the onion and sweet peppers evenly over it. Sprinkle the grated queso de freír over the filling.

  6. 6

Cover with the remaining corn mixture. Arrange the ripe plantain slices on top in slightly overlapping rows. Brush or drizzle with any juices left in the skillet and sprinkle the brown sugar over the top.

  7. 7

Bake for 30 to 35 minutes at 375°F / 190°C, until the center is set and the edges are lightly golden. For extra color, switch to broil for 2 minutes at 425°F / 220°C, watching closely.

  8. 8

Remove from the oven and let rest for 10 minutes before slicing. Finish with the remaining chopped cilantro and serve hot.

Chef tips

For a firmer texture, let the pie rest 15 minutes before serving. If your corn is very sweet, reduce the brown sugar to 1 teaspoon. Use medium shrimp so they do not overcook in the oven.

Substitutions

You can replace queso de freír with low-moisture mozzarella or Monterey Jack. Cilantro can be swapped for parsley. If you cannot find Dominican sweet peppers, use mild red bell pepper diced small.
