Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Toss the sweet potato with 2 tablespoons vegetable oil, the ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a tray and roast for 30 to 35 minutes, turning halfway through, until golden and tender.

  2. 2

    2. While the sweet potato roasts, heat 1 tablespoon vegetable oil in a skillet over medium heat. Brown the frying cheese sticks for 1 to 2 minutes per side until lightly crusted. Transfer to a plate and let cool slightly.

  3. 3

    3. In a bowl, mix the garlic, sour orange juice, 1 1/2 teaspoons dried oregano, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Rub this mixture over the chicken breasts, including inside each pocket.

  4. 4

    4. Stuff each chicken breast with the browned frying cheese sticks. If needed, secure with toothpicks so the filling stays inside.

  5. 5

    5. Heat the remaining 1 tablespoon vegetable oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2 to 3 minutes per side until browned.

  6. 6

    6. Transfer the skillet to the oven at 220 °C / 425 °F and bake the chicken for 14 to 18 minutes, or until fully cooked through. Remove from the oven and let rest for 5 minutes.

  7. 7

    7. For the sauce, place the same skillet over medium heat. Add the butter, red onion, and sweet pepper. Cook for 4 to 5 minutes until softened. Add the remaining dried oregano and cook 30 seconds more.

  8. 8

    8. Pour in the chicken broth and let it simmer gently for 3 to 4 minutes, scraping the bottom to release the browned bits. Adjust with the remaining salt and black pepper to taste.

  9. 9

    9. Toss the roasted sweet potato with the chopped fresh cilantro. Serve each stuffed chicken breast with the red onion and sweet pepper sauce spooned on top, alongside the cumin sweet potato.

  10. 10

    10. Remove the toothpicks before serving and drizzle any resting juices from the chicken over the plate.

Chef tips

Brown the frying cheese before stuffing so it holds its shape better inside the chicken. If the chicken breasts are very thick, loosely cover them with foil if they brown too quickly in the oven.

Substitutions

You can substitute the sweet potato with yautia or roasted squash. If Dominican frying cheese is unavailable, use halloumi, knowing the flavor will change. Sour orange juice can be replaced with half orange juice and half lime juice.
