Chicken in Corozo and Sweet Pepper Sauce with Creamy Yam Hominy

An original recipe inspired by Colombian Caribbean flavors: chicken thighs seared and simmered in a sweet-tangy corozo, sweet pepper, tomato, and panela sauce, served over a creamy yam and tender white corn hominy. A comforting, vibrant, deeply Colombian dish.

Instructions

  1. 1

    1. Season the chicken thighs with 4 g (3/4 tsp) salt, black pepper, cumin, and annatto powder. Mix well and let rest for 10 minutes while you prepare the remaining ingredients.

  2. 2

    2. In a wide pot or deep skillet, heat the oil over medium-high heat. Sear the chicken for 3 to 4 minutes per side until browned. Remove and set aside on a plate.

  3. 3

    3. In the same pot, add the white onion, scallions, garlic, and sweet pepper. Cook over medium heat for 5 minutes, stirring, until the vegetables soften.

  4. 4

    4. Add the tomato and cook 4 minutes more, lightly crushing it with the spoon to create a stew-like base.

  5. 5

    5. Stir in the corozo pulp, panela, 240 ml (1 cup) chicken broth, and bay leaves. Mix well and let it come to a gentle boil for 2 minutes.

  6. 6

    6. Return the chicken and its juices to the pot. Lower the heat, cover partially, and cook for 25 minutes until the chicken is tender and fully cooked. If checking internal temperature, it should reach 165°F (74°C).

  7. 7

    7. Meanwhile, in another pot, place the yam with the remaining 240 ml (1 cup) chicken broth. Cook over medium heat for 12 to 15 minutes until the yam is very tender.

  8. 8

    8. Add the cooked white hominy, coconut milk, and 2 g (1/2 tsp) salt to the yam pot. Cook for 8 more minutes over medium-low heat, stirring occasionally so the yam releases starch and the hominy becomes creamy.

  9. 9

    9. Turn off the heat for the hominy mixture and stir in half of the chopped cilantro. Adjust salt if needed and keep warm.

  10. 10

    10. When the chicken is ready, remove the bay leaves. Add the lime juice and cook 1 more minute to brighten the sauce. Taste and adjust with the remaining 2 g (1/4 tsp) salt if needed.

  11. 11

    11. To serve, divide the creamy yam hominy among shallow bowls and top with the chicken and plenty of corozo sauce. Finish with the remaining fresh cilantro.

  12. 12

    12. For an oven-finished presentation, you may transfer the cooked chicken to a baking dish and warm it for 5 minutes at 350°F (175°C) before serving, without letting the sauce dry out.

Chef tips

If fresh corozo is unavailable, use unsweetened frozen pulp. For a smoother sauce, blend the sautéed sauce base before returning the chicken to the pot. The hominy should be creamy, not dry; add a little more broth if it thickens too much.

Substitutions

You can replace yam with cassava, though the result will be less creamy. If cooked white hominy is not available, use canned hominy, well drained. Sweet pepper may be replaced with a smaller amount of mild red bell pepper.
