Instructions
- 1
Preheat the oven to 200°F / 95°C to keep the chicken warm if desired while you finish the sauce and vegetables.
- 2
Season the chicken thighs on both sides with salt, black pepper, and garlic powder.
- 3
Heat a large skillet over medium-high heat with the avocado oil. Sear the chicken for 4 to 5 minutes per side until well browned and cooked to a safe internal temperature of 165°F / 74°C. Remove the chicken and keep warm in the preheated oven.
- 4
In the same skillet, add the butter. Add the cremini mushrooms and cook for 5 minutes, stirring occasionally, until browned. Add the bok choy and cook for 2 to 3 minutes more, until tender but still slightly crisp. Remove the vegetables and reserve with the chicken.
- 5
Reduce the heat to medium. Add the fresh ginger and chopped garlic to the skillet and cook for 30 seconds, stirring, until fragrant.
- 6
Pour in the coconut milk and chicken broth, scraping the bottom of the skillet to release the browned bits. Add the tahini, soy sauce or tamari, lime zest, lime juice, and sesame seeds. Cook for 3 to 4 minutes over medium-low heat until the sauce thickens slightly.
- 7
Return the chicken, mushrooms, and bok choy to the skillet. Spoon the sauce over everything and cook for 2 more minutes so the flavors meld and everything is heated through.
- 8
Turn off the heat and finish with chopped chives and red pepper flakes if using. Serve hot with extra sesame seeds on top if desired.
Chef tips
For a thicker sauce, let it reduce for 1 to 2 extra minutes before returning the chicken to the skillet. Pat the mushrooms dry before cooking so they brown instead of releasing too much moisture.
Substitutions
You can swap the bok choy for Swiss chard or sturdy spinach. Tahini can be replaced with sunflower seed butter, though the flavor will change slightly. If you do not have chicken thighs, use chicken breast and cook carefully to avoid drying it out.
