Instructions

  1. 1

    1. Season the chicken thighs with 1 teaspoon of the salt, black pepper, cumin, annatto or paprika, and oregano. Mix well and let rest for 10 minutes while you prepare the remaining ingredients.

  2. 2

    2. Place the creole potatoes in a pot with enough water and a pinch of salt. Cook over medium heat for 20 to 25 minutes, until very tender. Drain and keep warm.

  3. 3

    3. Meanwhile, heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Brown the chicken for 4 to 5 minutes per side, until nicely colored. It does not need to be fully cooked at this stage. Transfer to a plate.

  4. 4

    4. In the same skillet add the remaining tablespoon of oil, the scallions, and garlic. Sauté for 2 minutes. Add the diced tomato and cook for 5 minutes, gently pressing it to form a rustic sauce base.

  5. 5

    5. Add the lulo pulp and 1 cup of chicken broth to the sauce base. Cook for 3 minutes over medium heat. Return the chicken to the skillet, cover, and cook for 15 to 18 minutes, until the chicken is fully cooked and reaches an internal temperature of 165°F and 74°C.

  6. 6

    6. Add half of the cilantro and the lime juice to the sauce. Taste and adjust with the remaining salt if needed. Cook 1 more minute and keep warm over low heat.

  7. 7

    7. For the creamy hominy-style mash, mash the still-hot creole potatoes with the butter in a pot. Add the heavy cream and the remaining cup of chicken broth little by little until you reach a creamy, rustic texture.

  8. 8

    8. Stir the sweet corn into the mash and cook over low heat for 3 to 4 minutes, stirring, until the corn is tender and the mixture is thick yet soft. Adjust salt to taste.

  9. 9

    9. If you want to keep the mash warm before serving, cover it and place it in an oven at 200°F and 95°C for up to 10 minutes.

  10. 10

    10. Serve a bed of creamy creole potato and corn mash on each plate. Arrange the chicken on top with plenty of lulo sauce and finish with the remaining cilantro.

Chef tips

For a brighter sauce, blend the lulo pulp with the broth before adding it to the skillet. If the lulo is especially tart, add 1 teaspoon of grated panela without masking its fresh flavor.

Substitutions

You can replace creole potatoes with small yellow potatoes. If you cannot find lulo, use a mild passion fruit mixture with a little tree tomato, though the flavor will change. Heavy cream can be replaced with plant-based cream for a dairy-free version.
