Instructions

1. Season the beef round with 6 g salt, black pepper, and half of the cumin. Let it rest for 10 minutes while you prepare the remaining ingredients.
- 2
2. Heat a heavy pot over medium-high heat with 1 tablespoon vegetable oil and the annatto. Brown the beef in batches for 6 to 8 minutes until nicely colored. Remove and set aside.
- 3
3. In the same pot, add the white onion, half of the scallions, and the garlic. Cook for 4 minutes until fragrant and lightly golden.
- 4
4. Return the beef to the pot, add 500 ml (2 cups) beef stock or water, and cover. Cook over low heat for 90 minutes, or until the meat is tender and the base sauce has reduced. Add a little more liquid during cooking if needed.
- 5
5. Meanwhile, place the tamarillos directly on a hot skillet or griddle over medium-high heat and roast for 6 to 8 minutes, turning them, until the skin is charred in spots and the flesh is soft. Let them cool slightly, peel them, and blend them with 200 ml (scant 1 cup) stock, the panela, and the remaining cumin.
- 6
6. Pour the blended tamarillo sauce into the pot with the beef and cook uncovered for 15 more minutes, stirring occasionally, until slightly thickened and glossy. Adjust with the remaining salt to taste.
- 7
7. For the purée, cook the green plantains in a pot with enough water for 20 to 25 minutes until very tender. Drain and mash immediately with the butter and warm milk until smooth. Keep warm.
- 8
8. For the warm salad, cook the green beans in boiling water for 4 to 5 minutes until tender-crisp. Drain and toss with the remaining scallions, lime juice, 1 tablespoon vegetable oil, and the cilantro.
- 9
9. If you want to keep the dish warm before serving, you can place the finished beef in the oven at 250 °F / 120 °C for up to 10 minutes, tightly covered.
- 10
10. Serve a base of green plantain purée, top with the beef and plenty of smoked tamarillo sauce, and add the warm green bean salad on the side.
Chef tips
For a deeper sauce, roast half of the white onion along with the tamarillos before blending. If the beef is cut into even pieces, it will cook more evenly.
Substitutions
You can swap the beef round for flank or brisket chunks. Panela can be replaced with brown sugar, and the milk in the purée can be replaced with more stock for a dairy-free version.
