1. Toast the sunflower seeds in a small skillet over medium heat for 1 to 2 minutes, stirring constantly, until nutty and fragrant. Remove and set aside.
- 2
2. In a bowl, mix the cottage cheese with the dill, half of the chives, 1 teaspoon (5 ml) lemon juice, the honey, 1/2 tablespoon (7 ml) olive oil, half of the salt, and a little black pepper. Stir until you get a rustic creamy mixture.
- 3
3. Heat a large skillet over medium heat. Add the remaining 1/2 tablespoon (7 ml) olive oil and sauté the radishes for 3 minutes, cut side down at first, until warm and lightly golden. Season with the remaining salt and a bit more black pepper.
- 4
4. Turn off the heat and add the green apple, remaining lemon juice, and the rest of the chives to the skillet. Toss for 20 seconds so the apple slightly warms without losing its freshness.
- 5
5. Spread the cottage cheese mixture on a platter or divide among 4 small plates. Arrange the warm radishes and green apple on top.
- 6
6. Finish with the toasted sunflower seeds and, if desired, a little extra fresh dill and black pepper. Serve immediately.
Chef tips
For a smoother texture, you can briefly blend the cottage cheese. Do not overcook the radishes: they should be tender outside and crisp inside.
Substitutions
You can swap the cottage cheese for thick ricotta or strained Greek yogurt. Green apple can be replaced with firm pear, and sunflower seeds with pumpkin seeds.
