Instructions

  1. 1

Take the beef out of the refrigerator 15 minutes before cooking. Pat it dry well and season both sides with half of the salt, black pepper, ground cumin, and smoked paprika.

  2. 2

In a small bowl, mix 15 ml (1 tbsp) soy sauce with 15 ml (1 tbsp) honey. Brush this mixture over the surface of the beef and press the sesame seeds onto both sides to create a light crust.

  3. 3

In another bowl, mix the sour cream with the lime zest, 15 ml (1 tbsp) lime juice, a pinch of salt, and half of the chopped cilantro. Chill the lime cream until ready to serve.

  4. 4

Heat a large skillet over medium-high heat for 2 minutes. Add 15 ml (1 tbsp) olive oil. Once hot, sear the beef for 3 to 4 minutes per side for medium, or until the center reaches 145°F (63°C). For medium-rare, cook to 135°F (57°C). Remove the beef and let it rest for 8 minutes.

  5. 5

While the beef rests, place another large skillet over medium heat. Add the butter and the remaining 30 ml (2 tbsp) olive oil. Add the carrots and cook for 3 minutes, stirring occasionally.

  6. 6

Add the chopped garlic, the remaining 15 ml (1 tbsp) honey, the remaining 15 ml (1 tbsp) soy sauce, and 60 ml (1/4 cup) water. Cook for 8 to 10 minutes over medium heat, stirring, until the liquid reduces and the carrots are tender and glossy.

  7. 7

Add the remaining lime juice, the rest of the cilantro, and an extra pinch of salt to the carrots if needed. Stir well and turn off the heat.

  8. 8

Slice the beef thickly. Serve with the glazed carrots and a generous spoonful of lime cream on top or on the side. Finish with extra fresh cilantro if desired.

Chef tips

For a more even sesame crust, press the seeds on right after brushing the honey-soy mixture. Do not move the beef while searing so it develops a good crust.

Substitutions

You can use ribeye or top sirloin in place of strip steak. Thick Greek yogurt can replace sour cream. If you do not have lime, use lemon. For a dairy-free version, serve the beef with the carrots only and omit the cream.
