Instructions

  1. 1

    1. Wash the Swiss chard leaves and trim away the thick stems with a knife so they roll more easily. Bring water to a boil in a pot and blanch the leaves for 30 to 45 seconds; immediately transfer them to a bowl of cold water, then drain and dry well.

  2. 2

    2. In a bowl, mix the ricotta, grated Parmesan, breadcrumbs, garlic, lemon zest, 1 tablespoon of the chopped parsley, nutmeg, egg, 1 teaspoon of the olive oil, salt, and black pepper until the filling is evenly combined.

  3. 3

    3. Place one Swiss chard leaf on a work surface. Add a portion of filling at the base and roll it up, folding in the sides to make a compact roll. Repeat with all 8 leaves.

  4. 4

    4. Preheat the air fryer to 190 °C / 375 °F for 3 minutes.

  5. 5

    5. Brush the rolls with the remaining olive oil and arrange them in the basket in a single layer, seam side down. Cook at 190 °C / 375 °F for 10 to 12 minutes, until the edges are golden and the rolls are set.

  6. 6

    6. When they come out of the air fryer, drizzle the rolls with the lemon juice and sprinkle with the remaining parsley. If desired, add a little more grated Parmesan and serve warm or hot.

Chef tips

Dry the Swiss chard very well after blanching so the filling does not become watery. If your leaves are small, overlap two leaves to form each roll.

Substitutions

You can replace Swiss chard with large blanched kale leaves or rainbow chard. Parmesan can be swapped for pecorino, and parsley for dill or chives. For a gluten-free version, use gluten-free breadcrumbs.
