Instructions
- 1
In a bowl, mix the hummus with the red pepper flakes, half of the lemon juice, half of the mint, half of the parsley, and a pinch of black pepper until smooth and evenly combined.
- 2
In another small bowl, combine the cucumber with the remaining lemon juice, a pinch of salt, and the rest of the mint and parsley. Stir well and set aside.
- 3
Heat a nonstick skillet over medium heat for 1 minute, roughly 350°F / 175°C surface temperature. Add 1 teaspoon of olive oil and cook the crumbled feta for 2 minutes, stirring gently, until lightly golden at the edges. Remove from the heat.
- 4
Lay the zucchini ribbons on a board and spread each one with a thin layer of the hummus mixture. Add a small amount of the cucumber mixture to one end of each ribbon.
- 5
Carefully roll up each zucchini ribbon to form rolls. If any ribbon is very long, cut it in half before rolling.
- 6
Transfer the rolls to a plate, spoon the crispy feta over the top, and drizzle with the remaining teaspoon of olive oil. Finish with the rest of the black pepper and serve immediately.
Chef tips
For flexible zucchini ribbons, use the center of the vegetable and avoid the very seedy core. If you want a softer texture, salt the ribbons for 5 minutes and pat them dry before filling.
Substitutions
You can swap the feta for crumbled goat cheese. Mint can be replaced with basil, and cucumber with finely chopped radish for a sharper crunch.
