Instructions

  1. 1

    1. Using a mandoline or wide vegetable peeler, slice the zucchini into long, thin ribbons. Place them on paper towels, sprinkle with 2 g (about 1/3 tsp) salt, and let sit for 10 minutes to release moisture. Pat dry well.

  2. 2

    2. In a bowl, mix the ricotta, chopped spinach, 25 g (about 0.9 oz) Parmesan, egg, lemon zest, 1 minced garlic clove, 1 g (about 1/4 tsp) black pepper, and 1 g (about 1/4 tsp) salt until evenly combined.

  3. 3

    3. Lay the zucchini ribbons on a work surface. If any ribbon is too narrow, slightly overlap two pieces. Place a small spoonful of filling at one end and gently roll up to form compact rolls.

  4. 4

    4. Mix the panko with the remaining 15 g (about 0.5 oz) Parmesan. Brush the zucchini rolls with 15 ml (1 tbsp) olive oil and sprinkle the panko-Parmesan mixture over the top of each roll.

  5. 5

    5. Preheat the air fryer to 375°F (190°C) for 3 minutes. Arrange the rolls in the basket in a single layer with space between them. Air fry for 10 to 12 minutes at 375°F (190°C), until golden and set on top.

  6. 6

    6. Meanwhile, make the sauce. Heat the remaining 7 ml (1/2 tbsp) olive oil in a small skillet over medium heat. Add 1 minced garlic clove and cook for 30 seconds. Stir in the crushed tomato, dried oregano, 2 g (about 1/3 tsp) salt, 1 g (about 1/4 tsp) black pepper, and half of the chopped basil. Cook for 5 minutes, stirring occasionally.

  7. 7

    7. Spoon the rustic tomato sauce onto plates, place the crispy zucchini lasagna rolls on top, and finish with the remaining fresh basil.

  8. 8

    8. If needed, cook the rolls in batches to avoid overcrowding and keep them crisp.

Chef tips

Dry the zucchini very well before filling so the rolls hold their shape. For deeper browning, lightly spray or drizzle a little extra oil over the tops before cooking.

Substitutions

You can replace the spinach with very finely chopped sautéed Swiss chard. Parmesan can be swapped for a similar hard vegetarian cheese. For a gluten-free version, use gluten-free panko.
