Instructions

  1. 1

    1. Preheat the oven to 350°F / 175°C to toast the macadamia nuts. Spread the macadamias on a tray and toast for 6 to 8 minutes, until lightly golden and fragrant. Let cool and chop into medium pieces.

  2. 2

    2. Make the quick jam: in a small saucepan combine the blackberries, 25 g sugar, and lemon juice. Cook over medium heat for 8 to 10 minutes, lightly crushing the fruit, until thick and jammy. Let cool completely.

  3. 3

    3. In a large bowl, mix the bread flour, 55 g sugar, salt, and instant dry yeast.

  4. 4

    4. Add the warm milk, egg, and 60 g softened butter. Knead for 8 to 10 minutes, by hand or with a stand mixer fitted with a hook, until the dough is smooth, elastic, and only slightly tacky.

  5. 5

    5. Shape the dough into a ball, place it in a lightly greased bowl, and cover. Let it rise in a warm place for 45 to 60 minutes, until nearly doubled in size.

  6. 6

    6. While the dough rises, stir together the toasted sesame paste, brown sugar, 25 g melted butter, and 5 ml vanilla extract until you have a spreadable filling.

  7. 7

    7. Once risen, punch down the dough and roll it out on a lightly floured surface into a rectangle about 12 x 15 inches / 30 x 38 cm.

  8. 8

    8. Spread the sweet sesame cream over the dough, leaving a 1 cm border. Spoon the cooled blackberry jam over the top and gently spread it. Scatter the chopped macadamia nuts evenly over everything.

  9. 9

    9. Roll the dough up from the long side into a firm log. Cut into 9 even rolls using a sharp knife or kitchen thread.

  10. 10

    10. Arrange the rolls in a greased 9 x 9 inch / 23 x 23 cm pan, leaving a little space between them. Cover and let rest for 20 minutes while you preheat the oven to 350°F / 175°C.

  11. 11

    11. Bake the rolls for 22 to 25 minutes at 350°F / 175°C, until puffed and golden on top.

  12. 12

    12. While the rolls bake, whisk together the powdered sugar, 15 ml milk, and 2 ml vanilla extract until smooth and pourable.

  13. 13

    13. Let the rolls cool for 10 minutes after baking, then drizzle the glaze over the top. Serve warm or at room temperature.

Chef tips

If the jam seems too loose, cook it for 1 or 2 extra minutes before cooling so it does not leak out when slicing. For a shinier finish, add the glaze while the rolls are still slightly warm.

Substitutions

You can swap the blackberries for raspberries, and the macadamias for almonds or pecans. The toasted sesame paste can be replaced with mild tahini, adding 1 extra teaspoon of sugar if needed.
