Instructions

  1. 1

    1. In a large bowl, combine the bread flour, granulated sugar, fine salt, and instant dry yeast.

  2. 2

    2. Add the warm whole milk and the egg. Mix until a shaggy dough forms, then gradually incorporate the 75 g (5 tbsp) softened unsalted butter.

  3. 3

    3. Knead for 8 to 10 minutes, by hand or mixer, until the dough is smooth, elastic, and slightly shiny. Shape into a ball and place in a lightly greased bowl.

  4. 4

    4. Cover and let the dough rise for 60 minutes in a warm place, until visibly puffed and larger in size.

  5. 5

    5. Meanwhile, make the filling. Melt the 100 g (7 tbsp) unsalted butter over very low heat or in short intervals and add the Earl Grey tea. Let it infuse for 10 minutes, strain if you prefer a smoother texture, and cool until spreadable, not liquid.

  6. 6

    6. In a bowl, mix the infused butter with the light brown sugar, ground cinnamon, half of the orange zest, the chopped dried cherries, and the toasted chopped pecans.

  7. 7

    7. Lightly grease a rectangular or round baking pan. If you want a more controlled proof, preheat the oven to 200°F (95°C) for 2 minutes, turn it off, and use it only as a warm proofing space, not for baking.

  8. 8

    8. Roll out the dough on a lightly floured surface into a rectangle about 16 x 12 inches (40 x 30 cm). Spread the filling evenly almost to the edges.

  9. 9

    9. Roll the dough up from the long side into a firm log. Cut into 12 equal pieces and arrange them in the pan with very little space between each one.

  10. 10

    10. Cover the rolls and let them proof for 25 minutes more, until puffy. Meanwhile, preheat the oven to 350°F (175°C).

  11. 11

    11. Bake for 24 to 30 minutes at 350°F (175°C), until the rolls are golden and baked through in the center.

  12. 12

    12. While they bake, make the glaze by whisking together the powdered sugar, orange juice, whole milk, vanilla extract, and the remaining orange zest until smooth and thick but pourable.

  13. 13

    13. Let the rolls rest for 10 minutes after baking, then drizzle with the glaze. Serve warm or at room temperature.

Chef tips

Toast the pecans for 6 to 8 minutes at 325°F (165°C) to deepen their flavor before chopping. If the dough resists while rolling out, let it rest for 5 minutes so the gluten can relax.

Substitutions

You can swap the dried cherries for dried cranberries or golden raisins. Pecans can be replaced with walnuts or toasted almonds. If you do not have Earl Grey, use black tea with an extra pinch of orange zest.
