Instructions
- 1
1. In a large bowl, combine the bread flour, sugar, salt, and instant dry yeast. Add the warm whole milk and 1 egg, then mix until a rough dough forms.
- 2
2. Gradually incorporate the 80 g softened unsalted butter and knead for 10 to 12 minutes until the dough is smooth, elastic, and slightly glossy. Cover and let rest in a warm place for 60 minutes, or until nearly doubled in size.
- 3
3. While the dough rises, preheat the oven to 400°F / 200°C. Place the diced apples in a small baking dish or ovenproof skillet with 20 g unsalted butter, brown sugar, ground cinnamon, and lemon juice. Toss well.
- 4
4. Roast the apple mixture for 15 minutes at 400°F / 200°C, stirring once halfway through, until tender and lightly caramelized. Let it cool completely.
- 5
5. For the saffron butter, combine the 10 ml hot water with the crushed saffron threads and let steep for 5 minutes. Then mix that infusion with 60 g softened unsalted butter until smooth.
- 6
6. For the crunch, toss the sliced almonds with 20 g sugar and toast them on a tray for 5 minutes at 350°F / 175°C, or until golden. Let cool.
- 7
7. Punch down the dough and roll it out on a lightly floured surface into a rectangle about 16 x 12 inches / 40 x 30 cm. Spread the saffron butter all over the surface.
- 8
8. Evenly scatter the cooled roasted apples over the dough and sprinkle the toasted sugared almonds on top.
- 9
9. Roll up the dough from the long side into a firm log. Cut into 10 equal pieces. Make a small cut in the center of each piece and gently open it slightly to create a rosette shape.
- 10
10. Arrange the rosettes on a parchment-lined baking tray, leaving space between them. Cover loosely and let rise for 20 minutes.
- 11
11. Preheat the oven to 375°F / 190°C. Brush the rosettes with the beaten egg and bake for 15 to 18 minutes at 375°F / 190°C, until deeply golden.
- 12
12. While they bake, whisk the powdered sugar with 15 ml whole milk and the vanilla extract until smooth.
- 13
13. Let the rosettes cool for 10 minutes, then drizzle the glaze over the top. Serve warm or at room temperature.
Chef tips
For a cleaner shape, chill the rolled log for 10 minutes before slicing. If the dough springs back while rolling, let it rest for 5 minutes and try again.
Substitutions
You can use firm pear instead of apple. The almonds can be replaced with sunflower seeds if you want to avoid tree nuts, though the allergen profile will change.
