Instructions

  1. 1

    1. Pat the pork chops dry with paper towels and season both sides with salt, black pepper, onion powder, and sweet paprika.

  2. 2

    2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Toast the macadamia nuts for 1 to 2 minutes, stirring, until lightly golden. Remove and set aside.

  3. 3

    3. In the same skillet, add the remaining tablespoon of olive oil. Sear the pork chops for 3 to 4 minutes per side, until well browned and they reach a safe internal temperature of 145°F / 63°C. Transfer to a plate and let them rest.

  4. 4

    4. Reduce to medium heat. Add the butter, yellow bell pepper strips, and dried thyme. Cook for 5 minutes until the pepper softens and develops a little color.

  5. 5

    5. Add the minced garlic and cook for 30 seconds more, stirring so it does not burn.

  6. 6

    6. Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits. Cook for 2 minutes.

  7. 7

    7. Add the cream cheese, heavy cream, and lemon juice. Stir until you have a smooth, creamy sauce. Cook for 2 to 3 minutes over medium-low heat.

  8. 8

    8. Add the fresh spinach and stir for 1 to 2 minutes until wilted into the sauce.

  9. 9

    9. Return the pork chops to the skillet along with any resting juices. Cook for 2 to 3 minutes more, spooning sauce over them, until everything is hot.

  10. 10

    10. Serve the pork chops topped with the yellow pepper spinach cream. Finish with the toasted macadamia nuts over the top.

Chef tips

For a smoother sauce, chop the pepper into smaller pieces before cooking. If you prefer a silkier texture, blend the sauce before adding the spinach.

Substitutions

You can swap macadamia nuts for pecans or almonds if you do not need the exact same flavor profile. Spinach can be replaced with tender chard, and yellow bell pepper with orange bell pepper for a similar taste.
